LAMB OSSO BUCO

serves 6

ingredients:

2 tablespoons extra virgin olive oil
6 osso buco parts (lower back thigh)
2 carrots - peeled and sliced in 3cm slices
12 shallots - peeled
3 potatoes - diced
3 parsnips - cleaned and cut into sticks
3 celery roots - peeled and sliced
3 thyme stalks
1 rosemary branch
2 tablespoons salt, black pepper
2 tablespoons baharat mixture
2 tablespoons honey
4 cardamon pods
1/2 teaspoon coriander seeds
1/2 teaspoon caraway seeds
6 marrow bones
1 bottle red wine
(Zinfandel, Merlot, Cabernet Sauvignon)
3 cups orange juice
2 crushed tomatoes

preparation:
------------
1.heat oil in large pot,
brown meat on each side
2.add rest of ingredients,
bring to a boil, cover and
simmer approx. 2 hours, til
meat is very tender.
3.taste and adjust spices.
4.serve hot with rice, cous-cous
or mashed potatoes.
